When my husband and I decided to go vegan/vegetarian during the week it was inspired from a need to be more mindful about the foods we eat and be more intentional about our overall wellness. Not to mention, this became especially important to us as parents of a toddler as we want to continue to set a positive example for our son as we relate to eating well.
However, every so often we experience the mealtime slump where we seemingly run out of ideas for dinner. That is until I discovered this brand new vegan cookbook called Power Plates by plant-based enthusiast, nutritionist, and food writer Gena Hamshaw! I’m always on the lookout for new and exciting recipes to try and Power Plates has 100 easy-to-follow recipes that incorporate the freshest ingredients.
Power Plates is a cultivated cookbook filled with 100 vegan one-pot recipes that are sure to satisfy any taste and craving. In addition to providing easy to make weeknight meals, Gena strives to provide a healthy, and well-balanced, approach to each recipe she’s crafted.
“…our culture is flooded with conflicting philosophies regarding nutrition and strident options about what is and isn’t healthy. But one way of looking at it is that a balanced plate of food contains some protein, some fat, and some complex carbohydrates. […] After a lot of stumbling and searching, I’d found a way of approaching nutrition that was focused on long-term, sustainable well-being. And the best part was that it didn’t involve overthinking or cumbersome rules.“
Have you been thinking about trying out a plant-based diet, but don’t know where to start or even know what or where these ingredients are? Luckily, Gena explains it all in the pages of her cookbook – equipping vegan novices and veterans alike with more information and understanding on how each plate is balanced and packed with nutrition. All of her recipes incorporates legumes/beans, plant-based proteins, and carbohydrates and paired with fresh and seasonal veggies. I love that her recipes are kept simple and easy to use with meal prepping during the week for lunches.
