It’s always difficult to recognize when you’re halfway through your vacation. Being in Kaua’i up until this point had been so fun and filled with adventure. Having just completed our hike through the Waimea Canyon it was time to do a little laid back exploring of the town and getting a little grub on.

This is just one shot of the many delicious meals and drinks we had during our time on the island. The sushi was so fresh and I have to say they know how to make a good dirty martini at our hotel. We love finding new restaurants around the small town and the husband knows how to treat a girl to a good meal.

The sunsets were another favorite of mine and something I’ll remember forever. I loved how the sky just seemed to slowly fade from daytime blue to purple to nighttime. The stars were always visible and overall it just made me appreciate this beautiful planet we get to enjoy.

Champagne & Justin Bieber

Yes, you read that correctly.

One of the evenings my husband had planned was to take me to the St. Regis, which if you don’t know is this uber fancy resort that sits on the opposite side of Kaua’i in Princeville. He made a reservation at their restaurant for our anniversary, but beforehand there was a fun tradition the hotel has as the sun begins to set off the coast.

Everyone gathers on the patio area for light food and drinks, then at sunset a man from the hotel speaks a little about the tradition of Champagne Sabering there at the St. Regis, he cuts the bottle, we all cheers, and enjoy some bubbly as the sun goes down. It was a small event that made our trip even more special and romantic.

I truly appreciate the thought that my husband puts into researching and planning these kinds of things. I will gladly participate in many more hikes like we did at Waimea Canyon if it means celebrating like this!

But I do suppose you’re interested in hearing about our Justin Bieber run-in, right?

Well, it was more like my husband’s run in with him. He was walking towards the bathroom before the sabering and noticed, who he called a tool, in the lobby on a hover board and a bunch of security. He didn’t notice who it was at first, but then realized it was Justin. When he came back from using the restroom he came and told me he was here and that’s when I saw him standing out on the patio, but only for a moment.

Yeah, living in CA for almost three years I’ve never really ran into a ‘celebrity’ then this is my one encounter (barely). So if you’re looking to ever run into Justing Bieber on vacation then just come hang out at this ritzy resort next time (I actually did hear he vacations in Kaua’i quite often).

I couldn’t have asked for a more perfect evening to celebrate our first wedding anniversary and will be one for the record books. My husband did such an amazing job finding a new experience for us with the champagne at sunset with dinner being equally just as special.
